Tasty Tuna Melt

I love Tuna Fish. Tuna fillets, cold Tuna Fish with crackers and Tuna salads. You name it, and I’ve made it. Growing up my Mother was a huge Tuna Fish fan, we couldn’t even make ourselves a sandwich without her sniffing it out and asking us to make her one too. When I’m not sure what to make I always happen to have some canned Tuna in my pantry to save the day.

This is one of those sandwiches that screams comfort food, but isn’t all that bad for you. It’s loaded with veggies and tons of flavor. It’s what I make when I want a really great tasting sandwich, but don’t want to take the time making something fancy.  Go ahead, try it, and let me know what you think.

Here is the recipe below.

Thinly butter each slice of bread and gently lay each slice into a pan over medium heat with butter side facing down. Start assembling your sandwiches right away while this side of the bread cooks. Layer with tuna mixture and tomatoes. This is my favorite part, actually putting the sandwich together. Make me that much hungrier.

Once your sandwich is almost cooked on this side, put your cheese slices on top and your other slice of bread (make sure the buttered side is facing up) then flip over to cook the other side. Once cheese is melted your sandwich is done.

Serve with soup, chips, pasta salad, potato salad, or Watermelon and Basil like I did here. Enjoy!
