Maple Pecan Pie Granola

This made my house smell soo good and only took 20 minutes to make. It’s also 100% vegan! It’s a smaller serving size too, which is nice when you don’t want a huge container sitting around.

Ingredients

1 1/2 cup old fashioned oats

1/2 cup chopped pecan

1 tsp flax seed

1 tablespoon coconut oil

1/2 cup of pure maple syrup

1 tsp of pure vanilla extract

1/2 tsp of cinnamon

1/4 tsp of allspice

Kosher salt to taste

Method

Mix dry ingredients in a separate bowl and set aside. Combine all liquid ingredients in a small bowl and whisk together until fully combined (you’ll notice that the liquid mixture is similar to a pecan pie recipe). Once combined, pour liquid into dry ingredients and stir until fully incorporated throughout. Spread granola mixture onto a cookie sheet and bake/roast in the oven at 350 for about 15 minutes. Oven temps vary, so I’d check every 10 minutes.

Tip* I use the convection roasting option on my oven and it cooks much faster.
