Ingredients
2 cups of Ditalini pasta (or any pasta you like, preferably a smaller size), cooled and cooked according to package directions.
1/2 -1 cup mayo (or veganaise)
2 tablespoons white vinegar
1 tablespoon white sugar
A bunch of fresh dill, chopped (or 3 tsp dried dill weed)
1\2 cup sun dried tomatoes, roughly chopped
1 tsp of oil from the sun dried tomato jar
Freshly ground black pepper and kosher salt to taste
Method
Mix cooked pasta, mayo, vinegar and sugar in a medium sized bowl until well combined.
Add fresh dill, sundried tomatoes, oil, salt and pepper, mix well.
Taste and adjust seasonings as needed. Refrigerate for at least 30 minutes or until all pasta is cold. Stir again and serve cold.
Top with additional dill for garnish.
