Note: This could easily be made vegan or vegetarian, too!
2 cups of macaroni pasta (cooked according to package directions)
1 cup fresh cherry tomatoes
1/2 cup fresh zucchini, chopped
1/2 jar of your favorite tomato sauce
(Optional)1 to 1 1/2 cups of ground beef. Cooked, drained & seasoned with salt, pepper, garlic powder, onion powder, dried basil and oregano.
1 – 2 tablespoons of Extra Virgin Olive oil
Cook your pasta and ground beef per instructions above. Set aside. Pour a tablespoon of olive oil in a large saucepan and blister the tomatoes until they just start to pop. Add the zucchini and cook just until tender. Add the rest of the ingredients to the pan, and simmer until heated through, about ten minutes. Stirring at least once. Make sure to taste and season as needed. Top with parmesan cheese or any cheese mixture you like. Sharp cheddar or mozzarella would work well too.
