Super Simple Shrimp w/Angel Hair

 

This is something I make when I don’t really feel like cooking or when I’m running low on time but I still want a solid healthy meal. I particularly like this recipe because you can change it up really easily by adding different types of vegetables or seasonings. If you want to brighten it up, add some lemon juice. If you want a more savory take, add some crispy pancetta. Keep in mind that the pasta is light, so you don’t want to add too many additions or the pasta will get lost in the background. A sliced baguette or any other bread would work well with this dish too.

Super Simple Shrimp with Angel Hair pasta

Ingredients:

  • 1 pound jumbo shrimp (uncooked)
  • 1 cup of Angel hair pasta
  • 1/2 cup cherry or grape tomatoes cut in half (optional) or you can use 1/2 cup sundried tomatoes, chopped
  • 3 tablespoons of Olive Oil or for extra flavor use half Olive Oil and half Butter
  • 1-2 garlic cloves, minced
  • Kosher salt to taste
  • Ground black pepper to taste
  • A pinch of Red Pepper Flake
  • Freshly grated parmesan cheese

 

Instructions: 

First, cook the pasta according to package directions.

Both the pasta and shrimp cook very fast! What I like to do is cook the pasta until it’s almost done, remove from heat and strain. Making sure to reserve some pasta water. It will be perfect by the time the shrimp is ready.

Next, cook the shrimp in a large deep pan. Heat the olive oil (and butter if using) on medium heat then throw your shrimp in the pan and cook until shrimp are just starting to turn pink. Then, add the tomato, salt, pepper, garlic, and red pepper flake. Sauté until shrimp are done, opaque flesh and red tail. Remove shrimp from pan and set aside, do not overcook. The shrimp should only take a few minutes.

With the heat still on toss the pasta with a spoonful (or two) of pasta water with the tomato mixture until well coated. The cherry tomatoes should have started to pop open at this point, that is exactly what you want. Toss until nice and coated and creamy. Turn off heat and add the shrimp back to the pan, toss all together to incorporate. Serve with  grated parmesan cheese and bread if desired.
